It is almost a rite of passage, to make Chex mix for your party or at-home munching. Almost everyone has tasted it at a party, or has made a batch with mom or grandma. But now General Mills Chex Mix’s “masters” have come up with some interesting variations that you don’t have to make, or mix. I first discovered it at “Snack Attack,” a really great showcase of well…snack foods!
One called Muddy Buddies, is a peanut butter and chocolate covered Chex that not only tastes like sweet peanut butter and cocoa, but has 50% less fat than regular potato chips. It is a sweet dessert type delight but at 4.5g of fat per 28g serving (about1/3 cup), vs. 10g per 28g serving of chips, you can indulge with just 130 calories and only 9g of sugar.
The Advice Sisters always test what we write about up-close-and-personal. So for Chex Mix, I offered a full full sized (10.5 oz. 10 serving package) of Muddy Buddies to my guests during a lunch with some friends and their children. To my extreme amusement, one guest who is the pastry chef at a super-luxurious resort, kept dipping her own hands into the bowl, competing with the kids for a handful. At the end of 40 minutes, not a crumb was left!
There is some sodium, but at 50 g it is a lot less than a standard chip, and there are no trans fats. This Muddy Buddy does contain peanuts , milk, soy and some varieties may have wheat. The only issue I have with Muddy Buddies is that they are addictive. Put a bowl out and your guests will gobble them up. Serve it as a snack for your next girls night in, or movie night, and everyone will think you are the best host, without ever having to lift a spoon or stir a bowl!

9 cups Corn Chex®, Rice Chex®, Wheat Chex® or Chocolate Chex® cereal (or combination)
1 cup semisweet chocolate chips *You can substitute peanut butter chips instead of the chocolate chips.
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar
STEP !: Into large bowl, measure cereal; set aside.
STEP 2: In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
STEP 3: Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
